After a cold, chilly & dormant winter, comes the first flush darjeeling teas, The first harvest which takes place during spring, from february till april. New tender shoots appear on the tea shrubs with its delicate & fragile tea leaves which do not need oxidation & are simply dried to make ready for consuming. The liquor is characterized by a light translucent color & a mild floral astringent flavor that imparts a lively character to the tea. First flush leaves are perfect for tea lovers who dont like strong tea. Brewing is very simple, Just add 1tsp in a cup of 200 ml hot water(95?) & steep for 3-4 minutes (or as required as per taste) darjeeling tea is generally drunk without milk, sugar or lemon. A tea’s life circle in darjeeling in a year comprises of mainly four flushes. Each flush has a character of its own & it really depends on ones palate liking. Some like the first flush because it light and bright, whereas some like the second flush because it full bodied and dark.
