Chicory root contains oligofructose and inulin, two forms of soluble fiber that serve as a prebiotics to encourage the colonization of “friendly” bacteria in the gut. Chicory contains a high concentration of inulin. The herb is also a source of vitamin C. Chicory, also known as ragged sailors, blue dandelion and horseweed is a wayside herb and forage crop with vibrant blue flowers. A hardy perennial best known for its association with coffee, Chicory produces a more ‘roasted’ flavor, with no caffeine. Interesting note: Some coffees offer blends with up to 30% chicory, which cuts down on the caffeine content.
